Baby spinach (packed)
1 Cup
Boneless leg of lamb
5 Pounds
Chopped garlic (for stuffing)
3 Tablespoons
Chopped garlic (for wet rub)
2 Tablespoons
Chopped Greek olives
½ Cup
Feta cheese
½ Cup
Olive oil
3 Tablespoons
Rosemary
1 Teaspoon
Thyme
2 Tablespoons

Place the lamb on a flat surface with the fat side down. You may need to cut it a little to get it to lay flat. We would be happy to do it for you.

Evenly press the stuffing (spinach, feta cheese, olives and 3 tablespoons of chopped garlic all mixed well) on to the lamb. Roll it up and tie a few pieces of butcher's twine around the roast to hold it together.

Coat the outside with the wet rub (olive oil, thyme, rosemary and remaining 2 tablespoons of chopped garlic).

Sprinkle some kosher salt and black pepper over the top and place in a roasting pan.

Bake at 325° for 15 to 20 minutes per pound (about 90 minutes for a five pound roast).

Preheat oven at 325°

Use an internal thermometer to reach desired temperature
(120° for rare, 130° for medium rare).

Be sure to let the roast rest for about 10 minutes before cutting.
