4 hot or sweet Italian sausages
4 Count
Baby spinach
4 Cups
Chardonnay (Joel Gott works well)
1 Cup
Chopped garlic
2 Tablespoons
Extra virgin olive oil (I prefer Ariston)
½ Cup
Freshly shredded parmesan cheese
½ Cup
Grape tomatoes cut in half
1 Pint
Kosher salt and cracked black pepper to taste
2 Pinches
Sliced shallots
½ Cup
Unsalted butter
2 Tablespoons
Whole wheat spaghetti (We carry Di Martino)
1 Pound

Preheat oven to 350°

Boil your pasta, drain and set aside

Bake the sausage for about 15 minutes slice and set aside

Heat olive oil in a large sauté pan

Add the sausage, shallots and garlic and cook until the shallots are tender

Add wine to the pan and simmer for about 2 or 3 minutes. (Be careful, the wine may flare up for a second)

Add butter, tomatoes and spinach and toss until everything is well coated

Add pasta to the pan, season with salt and pepper to taste, toss and allow the pasta to absorb the sauce for about a minute.

Plate, top with parmesan cheese and enjoy!
